Xavi Buil was inspired to found Aceitunas Losada by his grandfathers’ legacy of grape, olive and almond farming. Reducing water consumption in agriculture is an international priority to achieve sustainability. By employing the RDI (regulated deficit irrigation) technique and traditional Spanish processing techniques, they were able to show that olive quality could still be preserved while water consumption decreased; keeping their osmotic process constant allowed for higher polyphenol content and antioxidant capacity in their table olives than those from other producers.
